# What You'll Need:

→ Lime Cilantro Rub

01 - 1 pound of boneless skinless chicken thighs (about 4 pieces)
02 - 2 tablespoons fresh chopped cilantro
03 - Two limes (juice and zest)
04 - 1 teaspoon regular salt
05 - 1 teaspoon chili powder
06 - 1 teaspoon ground cumin
07 - ½ teaspoon powdered garlic
08 - ½ teaspoon ground coriander seed
09 - 1 tablespoon cooking oil

→ Taco Toppings

10 - Soft tortillas
11 - Fresh pico de gallo
12 - Shredded cheese
13 - Handful of cilantro

# Step-by-Step Directions:

01 - Combine the oil with lime juice, zest, chopped cilantro and all seasonings in a bowl. Toss the chicken in a bag or container, pour everything over it, and give it a good shake. Let it sit for at least half an hour, but two hours works better.
02 - Fire up your grill or get your campfire going for cooking.
03 - Take the chicken out and throw it on the grill. Cook until it hits 165°F inside, flipping now and then for even cooking (usually takes 5-8 minutes each side). Once done, chop it into small chunks.
04 - Stack everything in your tortillas - first the chicken chunks, then pico de gallo, sprinkle cheese, and top with fresh cilantro. You can warm your tortillas on the grill too if you want. Eat them right away.
