Heat the oven to 175 degrees Celsius. Line an 8 by 8 inch pan with parchment.

Puree the cottage cheese till it's creamy. Add eggs, syrup, and vanilla. Blend again till smooth.

Whisk together cocoa powder, almond meal, baking powder, and salt in a bowl until mixed well.

Fold the dry mix into the wet mix gently. Don’t stir too much or the batter will get tough.

If you want, toss the chocolate chunks into the batter and mix evenly.

Pour batter into the pan and level it out. Bake for about 22 to 25 minutes. Check with a toothpick. It should come out with a few moist bits.

Let the baked brownies chill in the pan for 10 minutes. Cut into 9 slices when ready.
