Moist, high-protein brownies using creamy cottage cheese, cocoa, and almond flour for a guilt-free treat.

# Ingredients List:

→ Wet

01 - 2 big eggs
02 - 80 ml maple syrup
03 - 5 ml vanilla essence

→ Dry

04 - 1.5 g salt
05 - 50 g almond meal
06 - 5 g baking powder
07 - 50 g unsweetened cocoa powder

→ Cheese

08 - 240 g smooth cottage cheese

→ Extras

09 - 40 g dark chocolate chunks

# Detailed Cooking Steps:

01 - Heat the oven to 175 degrees Celsius. Line an 8 by 8 inch pan with parchment.
02 - Puree the cottage cheese till it's creamy. Add eggs, syrup, and vanilla. Blend again till smooth.
03 - Whisk together cocoa powder, almond meal, baking powder, and salt in a bowl until mixed well.
04 - Fold the dry mix into the wet mix gently. Don’t stir too much or the batter will get tough.
05 - If you want, toss the chocolate chunks into the batter and mix evenly.
06 - Pour batter into the pan and level it out. Bake for about 22 to 25 minutes. Check with a toothpick. It should come out with a few moist bits.
07 - Let the baked brownies chill in the pan for 10 minutes. Cut into 9 slices when ready.

# Helpful Hints:

01 - For a richer taste, pick Dutch-processed cocoa powder. Adjust sweetness by adding more or less maple syrup. Keep leftovers in the fridge airtight to keep them fresh.
