Take the apple chips off the trays. Eat right away or keep them crunchy in a sealed container.

Switch off the oven and let the apples chill inside for about half an hour. If they’re not crispy enough yet, bake in 15-minute chunks until you like the texture.

Carefully flip every apple slice over then bake for one more hour at the same low heat.

Put the apple slices in the oven and let them bake for an hour at 90°C.

Spread the apple slices in a single layer on those lined trays. Sprinkle cinnamon evenly on both sides.

Rinse the apples and slice them thin—about 3 mm thick with a mandoline slicer. Don’t forget to get rid of the seeds.

Heat the oven up to 90°C, which is 200°F.

Cover two big baking trays with either parchment or silicone mats.
