Set oven to 190°C and cover a baking tray with parchment.

Roll each tortilla tight and slice into pieces about an inch thick.

Place the cut slices with the spiral side up on the tray and lightly brush olive oil on them.

Lay tortillas out flat and spread sauce thinly and evenly over them.

Add shredded mozzarella first then evenly scatter pepperoni, peppers, and oregano

Pop the tray in the oven and bake 10 to 12 minutes until cheese bubbles and rolls turn golden.

Top rolls with parmesan, basil, or red flakes if you want, then serve warm.
