Grab a small bowl and stir the olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, rosemary, thyme, black pepper, and salt until everything's combined.

Drop your pork loin into a big ziplock bag or flat container. Pour all that tasty mix over the meat, making sure it's totally covered. Close it up tight or wrap the dish and stick it in the fridge for at least 2 hours. Leaving it overnight works even better.

Turn your oven on to 375°F (190°C) and let it warm up.

Take the pork out from the marinade mix and put it in your roasting dish. Just throw away whatever marinade is left.

Stick the pork in your hot oven and let it cook for about 45-60 minutes. You'll know it's done when the temperature inside hits 145°F (63°C).

After cooking, don't cut it right away. Let it sit for 10 minutes first. Then slice it up and dig in!
