Turn your slow cooker to high and cover it. Warm up the oven to 204°C. Drizzle a bit of olive oil on your sheet pan to stop sticking.

In a bowl, mix beef, pork, egg, mayo, pork rinds, Parmesan, salt, and pepper. Roll into 42 meatballs around 43 grams each. Place them on the pan and bake 12 to 15 minutes until they have a light brown color.

While meatballs are in the oven, mix chili sauce and sugar-free jam in the slow cooker. Stir it up. You can toss in some onion and garlic powder if you want more flavor.

Move the cooked meatballs into the slow cooker. Give everything a gentle stir so the sauce covers them. Put the lid on and cook on high for 2 to 3 hours or low for 8.
