02 - 1/2 teaspoon baking soda
03 - 1/4 teaspoon salt

→ Dough Mix

04 - 1 cup granulated sugar
05 - 1 large egg
06 - 1 teaspoon vanilla extract
07 - 1 cup unsalted butter at room temp

→ Pineapple Top

08 - 10 to 12 pineapple rings from the can, drained and patted dry
09 - Some extra sugar for sprinkling

# Step-by-Step Directions:

01 - Let the cookies sit on the tray for 5 minutes after baking then move them to a rack so they cool off completely.
02 - Set your oven to 350°F (175°C) and cover trays with parchment sheets.
03 - Whisk flour, salt, and baking soda in a bowl.
04 - Beat the butter and sugar together for 3 to 4 minutes till it's light and fluffy.
05 - Slowly stir in the flour mix to the wet stuff until it just comes together as a soft dough but don't overwork it.
06 - Make about 1 1/2 tablespoon balls, put them on trays, and gently press flat leaving enough space between.
07 - Gently press a pineapple ring on each dough disk.
08 - Add the egg and vanilla to the butter mix and beat until smooth throughout.
09 - Dust extra sugar on pineapple, then bake cookies 12 to 14 minutes till edges get golden and cookies are set.

# Helpful Notes:

01 - Make sure the pineapple rings are really dry so they don’t add too much moisture and make the cookies soft.
